Apple Crumble Pizza Pie

This is a recipe that is fun for kids to make!

Pastry for 9-inch two crust pie(make homemade or combine 2 Pillsbury rolled crusts)

6-7 tart apples, peeled(if desired) and cored

1/2 cup sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

Crumble Topping

Mix 3/4 cup all-purpose flour, 1/2 cup sugar and 1/2 cup firm butter until crumbly.

Heat oven to 450 degrees. Roll pastry 1 inch larger than 12-13 inch pizza pan. Place in pizza pan. Cut apples into about 1/2 inch thick slices. Starting at the edge of the crust and overlapping slices, cover crust with apples. Stir together sugar, cinnamon and nutmeg; sprinkle over apple slices. Top with crumble topping. Make a braided edge for fancy and for fun(just braid dough strips and place on crust edge with brushed egg yolk).

Bake 30 to 40 minutes. Serve warm and, if desired, topped with cinnamon ice cream. 8-10 servings.

The County Fair took place last week, and I entered for the 7th year in a row. This is one time each year that I really enjoy and look forward too. There are many different sections to enter, and it's fun! If you place 1st-4th, you win "premiums". With this years winnings, I have 86 ribbons...1st-3rd place. In the past, when I won for apple pie or pineapple upside down cake, I qualified for the state contest. Each winner represents their county at the state competition in Harrisburg at the Farm Show. I won 5th place in state for apple pie, and 4th place for the pineapple upside down cake. In fact, my mom googled my name and found this state competition with my picture and recipe. Technology at it's greatest! :) I have had so much fun doing this county fair, and I would encourage anyone who has interest to enter. Our county fair has a youth division as well, which is a great encourager for kids. I'm already thinking about next year, and what I can bring and do differently! :) This former "city" girl really has gone "country". :)

Funny story...we we're playing football with the boys...I kicked the ball...and got it stuck in the tree. Jeremy tried to get it down by throwing a shovel up in the tree...the ball came down...the shovel did not. Then he tried getting the shovel down by throwing a mulching fork up in the tree...the shovel came down...and thankfully the fork too. Many people were watching this whole event take place from their campsites. They had to be wondering why this man was throwing yard tools up in the sky! We all had a good laugh!

Camping for the weekend...

On Friday afternoon, we went camping for the weekend at Woodward Cave, PA. We arrived about 5 p.m., and set up our camper and our camp area. We enjoyed a fun evening with the boys. On Saturday morning, we got up @8 a.m. and made breakfast. We had french toast, ham, and grapes. Around 11 a.m., we went on a cave tour. Woodward Cave is one of the largest caves in PA. The temperature is a cool 48 degrees year round. There are many helictites, stalactites, and stalagmites to see. There are many different rooms open to the public to view and tour. There are several others that are only open to cavern educational interns, etc.. One room is called the "Hall of Statues" and is 200 feet long. This room features the tallest stalagmite in the region, "Tower of Babel"(14 feet tall). There is one room called the "Ballroom", which has held concerts, weddings, and over 400 people at a time in it. This tour is offered year round, and the rates are very reasonable. This tour is also handicap accessible. This facility also offers educational and school tours, and has many different programs throughout the year. The boys had a blast!
We had a really nice weekend together as a family. The boys were covered in dirt, and loving every minute of it. The campground offered a free ice cream social after lunch, which the boys were very happy about. At 6 p.m., the campground had free Bingo. I got to play from 6-7, and I won 1 time. Even though it cost nothing to play, they still gave out small prizes for winning. I picked out a coloring book for the boys!
We packed everything up this afternoon, and headed back home. The boys are ready to go again! The weekend was a hit! I won't mention the shower facilities......wildlife was showering with us! :( I was glad this shower was coin operated and QUICK! Not quick enough for me! HA! We all survived and enjoyed ourselves!

I Could Not Ask For More

I just want to thank God today for my family. I am the luckiest girl in the world. Jeremy is the best husband anyone could ever dream of! He loves us, provides for us, and is a great example of a Godly man. I could not imagine my life without him. He knows me better than anyone, and has always loved me no matter what my faults have been. He is the best daddy, and loves his boys more than words could ever say. He is so proud of his boys. My dreams came true, the first moment I met him. He has given me the best gifts ever...his love and our three sons...Jeremiah, Elijah & Isaiah. I have the privilege to stay at home and be with my boys, because of his hard work and sacrifice for our family. I never want to take for granted how much my family means to me. My life is a gift from God, and I just want to thank Him for it today! I am so unworthy, but I'm amazed each day how much God truly loves me.

Isaiah is 18 months old today!

This little baby boy is 18 months old today! Time goes by so fast...I'm always amazed how fast they grow! Isaiah is such a big boy! He is 28 pounds and 35 inches now! I can hardly believe that's it's been 18 months already. Isaiah has more energy than Jeremiah and Elijah put together. :) He is into everything and loves to state his opinions! He started walking at 9 months old, and he is running and doing "flips" now. He loves to play with his brothers, if they do what he wants them to do! His favorite word is "NO", which he uses freely. His favorite phrase "Let's go...or LET GO(if he wants down). He is talking up a storm, and it is humorous to listen too! He loves to race with his brothers at night! He starts at one end of the house and says "GO"...and he takes off running. He is sooo cute! He has broken my CD player in my desktop, the VCR, loves to play in the potty, and even poured Hershey syrup on Elijah(and proceeded to lick his chocolate covered fingers and smile)! BUT...at the end of the day...when he is laying in my arms...blond little wavy hair, chubby cheeks, soft, little fingers holding on to mine.....he's my baby boy! I love him more than words can express, and as his daddy says "he'll outgrow this stage eventually"! Until then, I'm having the time of my life with my 3 little men!
